Whole chicken is probably the thing I most enjoy preparing in my home. This recipe is very flavorful and easy to cook because the bird has been spatchcocked. Brining the chicken helps with keeping it moist, while spatchcocking helps to grill or cook the bird more evenly.

Swap option: You could swap sesame seeds for pumpkin seeds. Traditionally, salsa macha has sesame and peanuts, so you could also add peanuts.
